In 1827 confectioner Bélisaire Boissier created the Ball candy, whose round shape symbolizes the City of Paris. 

He first developed a version with Montmorency cherries after extracting their aroma, much like essential oils are extracted from flower petals in Grasse.

Gradually multiple flavours were developed like this flower assortment - Violet, Rose and Poppy, an absolute Margot favourite.
